Simple Recipe - Soy Sauce Chicken (Si Yau Gai)

There is quite a number of version of Soy Sauce Chicken, but to ensure my family will not be boring with what I cook, I gotta be innovative at time.

You can use fresh chicken or roast chicken for this dish.


Ingredients

8 chicken drumsticks/whole chicken

8 cups of water

Aromatics needed:

6 piece of slice ginger

1 whole garlic

2 stalks spring onion

3 to 4 star anise

2 cinnamon stock

6 whole shallots

Sauce Mixture 

1 cup soy sauce

1 1/4 cup dark soy sauce

1 cup rock sugar

1/2 cup Chinese cooking wine

1 tsp five spice powder

 

Steps

Stir fry all aromatics, add water in, add sauce mixture, bring to boil, add chicken and boil for 20 to 25 mins or till chicken in cooked. Done!




Simple Recipe - Creamy Porridge

Yes porridge is one of my favorite during lazy days. Just dump everything into  a pot and start cooking. Is quick and easy.

If cooking plain porridge, with a simple half of salted egg and a tablespoon of soy sauce, I am contented enough to make myself happy and  stomach full.  However, my youngest son dislike porridge so I can only cook this if he is not eating at home.

Recently I have cooked creamy porridge that both my elder son and hubby did commented yummy! For 3 person, these ingredients are sufficient and you will get a fragrant porridge.


Ingredient

3/4 cup of rice

Water

8 dried scallop

8 dried oyster, cut to your desired size

Minced pork marinate with soy sauce, pepper, tapioca flour, sesame oil and add in preserved vegetables (tung choy). Sauce that you require depends on how much minced pork.

Ginger cut stripe, quantity depends on your liking

Soy sauce - 1 tablespoon

Sesame Oil - 1/2 tablespoon

Pepper 1/2 teaspoon

1 egg


Method

Wash  the rice

Add in water to boil

Put in the scallop and oyster before the water is boiling

Stir the rice to avoid sticking into bottom of pot

Make into balls the marinated minced pork, mine is about 10 balls

When the porridge is 90% done, add in minced pork ball, ginger stripe, soy sauce, sesame oil and pepper.

 Lastly stir in an egg, you will have a creamy porridge

Days without a Domestic Helper


Life without domestic helper during this Covid-19 pandemic, I will have to wake up at 6.30 am daily to do some house chores before leaving to work. Still not too bad, everything can be managed since sons already grown up and they helped with daily sweep and mop their own room and some other simple chores. At times during public holiday and weekend will normally adjust my alarm clock to 7 am. Come on...trying to be hardworking but also tend to be lazy at times. As for weekly cleaning task, I will try to be off for at least 2 days in a week as wanted to give myself a break on the weekend.  If not, then I will do some cleaning on the weekend.

Mr hubby is the one that need to settle the dogs, his garden, fishes before leaving to work that made him grumble at time. After a long period of time, he stopped grumbling.

Dinner will be much simpler version as I try not to have too many deep fried stuff to minimize the cleaning of kitchen. More to steaming, braising and boiling. At times, sister in law  who happened to be my neighbor) cooked some extra dishes and gave me a small portion but enough for us as we are not a big eater during dinner.

Maid has left since June 2020, almost a year ago as she wanted to get married after 3 years working with us. Border is closed, thus no maid is allowed to come into our country.  Even our Malaysia Immigration could not give a clear indication as our cases is increasing again daily. 

Just hope this pandemic will end real soon.

I had a temporary maid, Siti. She was sent to me on 13 July 2020 but she ran away after a month plus she ran away on 23 August 2020.  I have managed to call her but she gave me reasons. After few months,in FB, I saw that she ran away from her employer too.

Since then I no longer take in any temporary maid as there are too many scammers out there.





 






Simple Recipe - Chicken in dark soy sauce and onion

The fragrance of fried crispy onion in this recipe, believe me you will like it with just simple ingredients. 

 

Ingredients (Suitable for 2 to 3 person)

2 large whole chicken leg cut into 4 pieces each

Marinate with 1 teaspoon turmeric powder and 1 teaspoon salt


Slice 3 small onion

Fried till crispy brown and set aside.


Pound or blend

Ginger thumbsize

6 cloves garlic

1 big onion


Method

Heat up wok, add in oil fry the sliced onion till brown, set aside

Use the same oil, fry the chicken till almost cooked, set aside

Use the same oil and different oil if you prefer

Pour in the pounded/blended ingredients

Follow by 2 tablespoon cili paste (blended dried chilies, small onion, garlic) or (blended dried chilies, small onion, garlic, lemongrass and turmeric)

2 teaspoon sugar, 1/2 teaspoon salt, 1 tablespoon dark soy sauce

Add in the fried chicken,  little water if necessary

Finally add in the sliced onion

 

 

 


There you go, simple dish that can be easily done and I am sure your family will love it..
