Brinjal has always been my hubby's favorite. This dish, Brinjal in coconut milk or Terung masak lemak is simple to prepare yet appetizing to go with rice and sambal shrimp paste
Ingredients
1 Brinjal
10 medium Prawn
3 Shallot
1 Lemon Grass (bruised)
6 Bird Eye's Chilli
1/2 Coconut for Milk
Tamarind juice (optional) or slice of tamarind
Salt
Method
Cut brinjal into square size, fry till golden brown, set aside.
Heat Oil, fry slice shallot, set aside
Add Lemon Grass, Bird Eye's Chlli , prawn
Add in Coconut milk
Put in brinjal
Let coconut milk boil a while
Serve in bowl top with shallot
