Simple Recipe - Spicy Prawn (Sambal Udang)

This is my version of Spicy Prawn (Sambal Udang), another simple and fast dish to prepare.

The dish suppose to be balance with tamarind juice and sugar, so if you feel that is lack of sourness, add in tamarind juice.  It really depends on individual taste bud.  As my cooking does not really follow measurement.  I just add whatever extra if I feel is necessary.

The next morning, my late father in law used to cook fried rice with the remainder balance of this dish adding in anchovies and egg. This type of fried rice is their family favorite.

Tamarind paste & minced flower bud


Ingredients 
9 tablespoon blended chili paste
Small piece Shrimp paste, approximately 1/2 inch
3/4 medium bowl tamarind juice
1 Torch Ginger Flower chopped finely
2 tsp sugar
1 tsp salt
30 Medium large prawn

Chili paste:
Medium Bowl of dried chili soaked in hot water
8 onions
6 garlic
Blend dried chili, onion and garlic in a blender

Keep the balance of the chili paste in the fridge for your next dish

Method
2 tablespoon cooking oil
Add in blended chili paste, fry till fragrance
Sugar, salt
Tamarind juice
Ginger Flower
Lastly prawn, just 5 mins
